Well this week is going a lot better than last week. I only have 2 numbers since Sunday that are over the 130 mark and they are only over by 2 or 3 points, so I figure that's pretty good.
I am figuring out that Chex and Kix cereal is not so good in the morning. I am going to talk to my dietitian after we get back from vacation and see what I can eat besides eggs and English muffins for breakfast. While I am really starting to like scrambled eggs, I can't eat them every day. So any of you reading my blog out there and have ideas let me know. I am picky with my food which is part of my problem.
The snacks have been the easy part for me, I have started eating nuts and much more string cheese, cottage cheese. I am also measuring out my food a little more, which let me tell you makes you really aware of a what a "serving size" is from the container of food. I found out that 1 cup of cut strawberries is a LOT of strawberries, but 1 cup of cereal, not so much! at least not what Mike and I are used to eating :) He is probably eating 2 cups of cereal a day, which makes sense why we go through so much of it. I have even given up my 3 to 4 scoops of ice cream every night and replaced that with 1 cup strawberries and a 1/2 cup of ice cream (which is the serving size and only 1 scoop).
The main meals are the toughest. Trying to figure out what I can make that's not too many carbs, has enough protein and fat has been a struggle. I always have my backup plan of Peanut Butter and Jelly sandwich which doesn't spike it too much. We also figured out that Ravoli (the fresh stuff) with Turkey Sausage, peppers, onions and spaghetti sauce is a great meal, however the sauce is awful for my heartburn.
Luckily I only have about 9 or so more weeks left of doing this. I am crossing my fingers that this isn't Type 2.

It sounds like you're doing great! Have you tried having cereal like Corn Flakes or Special K in the morning, but adding berries on top? That's what I've been eating, along with some cheese, for breakfast these days.
Another thing you could do with eggs is make omelets - that way you can put different stuff in it (ham, asparagus, etc.) so that at least you wouldn't be eating the same thing every day.

Alyssa - I think I looked at Special K and it wasn't too bad, the problem with Cereal is that most of them are 30 g for 1 cup or more, which is all I get and that's not counting the Milk.
As for the omelets, this is where my being picky of the foods I eat comes in, the ONLY way I can eat eggs is scrambled, or hard boiled and when I eat them hard boiled I can't eat the yolk ;) I know pathetic huh? As it is right now I think I just need to experiment with eating different things within the eggs.
What about eating things for breakfast that aren't breakfast foods? That gives you a few more options for protein.
I totally understand about the eggs. I can't stand them in any form.

I understand the picky thing - and I don't like eggs at all, so you're doing better than I would :D
How about making a breakfast quiche? I was just about to suggest an English muffin with cream cheese and smoked salmon (yum!), but then I remembered smoked fish is usually a no-no during pregnancy. Perhaps an Eng. muffin with sausage or ham with the egg to change it up a bit? It helps with your protein, too.
I have a yummy granola recipe that is delicious with yogurt, but it might be too high on the carbs. How about whole-grain waffles with peanut butter?
Thanks for the ideas Cheri - The quiche is probably out because I don't normally like the texture of them - yes I am strange ;) but I will definitely look into the whole grain waffles and peanut butter. Can you send me the recipe for the granola? I can always put a little less granola in it or something.
